Prepare the Chicken
Season both sides of the chicken breasts with salt and black pepper.

Bread the Chicken
Dredge each seasoned chicken breast in all-purpose flour, shaking off the excess. Dip into the beaten egg, then coat with panko breadcrumbs, pressing gently to adhere.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the breaded chicken breasts in the skillet. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Assemble the Sandwich
Toast the brioche slices if desired. On one slice, spread a layer of tonkatsu sauce. Place a piece of fried chicken katsu on top, add a handful of shredded cabbage, and drizzle with more tonkatsu sauce. Top with another slice of brioche.

Cut the sandwich in half and serve immediately, with additional tonkatsu sauce on the side if desired.
