Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onions, mushrooms, and peppers. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are soft and slightly caramelized.

Add the thinly sliced grilled chicken to the skillet with the sautéed vegetables. Stir well to combine and heat through for another 3-4 minutes.

Reduce heat to low and layer the provolone cheese on top of the chicken and vegetable mixture. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through, creating a pocket for the filling.
