Prepare the Bread
Cut the French bread into cubes and let it sit out overnight to dry out. If you're short on time, you can toast the cubes in the oven at 300°F (150°C) for about 20 minutes until dried but not browned.

In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté until softened, about 5-7 minutes.

Combine Ingredients
In a large bowl, combine the dried bread cubes with the sautéed onion and celery mixture. Stir in the sage, thyme, salt, and black pepper until evenly distributed.

Pour the chicken or vegetable broth over the bread mixture and add the beaten eggs. Mix gently until the bread is fully moistened and all ingredients are well combined.

Prepare the Baking Dish
Preheat your oven to 350°F (175°C). Grease a large baking dish (3-quart) with butter or non-stick spray.

Transfer the stuffing mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the stuffing is heated through.
