    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix until well combined and set aside.

Cappelletti Assembly

    Roll Out the Dough

    After the dough has rested, divide it into four pieces. Roll out one piece at a time on a floured surface until it is thin (about 1/16 inch).

    Cut the rolled-out dough into squares (approximately 2 inches). Place about 1 teaspoon of the cheese filling in the center of each square. Fold the square over to form a triangle and press the edges to seal. Then bring the two corners of the triangle together to form the cappelletti shape.

Cooking

    Bring a large pot of salted water to a boil. Gently add the cappelletti and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Sauce Preparation

    In a large skillet, melt the butter over medium heat. Add the fresh sage leaves and sauté until they are fragrant and the butter is slightly browned. Season with salt and pepper.
