Method
Preparation of Cauliflower

Preheat the Oven
Preheat your oven to 450°F (232°C). This will ensure your cauliflower gets crispy when roasted.

Prepare the Cauliflower
Cut the cauliflower head into bite-sized florets. In a large bowl, combine cauliflower florets, olive oil, salt, garlic powder, onion powder, and paprika. Toss until the florets are well coated.
Buffalo Sauce Preparation

Make the Buffalo Sauce
In a small saucepan, melt the unsalted butter over medium heat. Once melted, add hot sauce, garlic powder, and cayenne pepper. Stir well and let simmer for about 5 minutes, then remove from heat.
Combining and Baking

Bake the Cauliflower
Place the coated cauliflower florets on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, flipping halfway through.

Toss in Buffalo Sauce
Once the cauliflower is baked, remove from the oven and place in a large bowl. Pour the buffalo sauce over the hot cauliflower and toss until well coated.

Make the Dressing
In a mixing bowl, combine mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, and salt. Mix until smooth and well combined. Adjust salt to taste.
