Preparation
- 1
Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Brush the BBQ sauce onto the chicken during the last few minutes of grilling for added flavor.
- 2
Let Chicken Rest
Once grilled, remove the chicken from the grill and let it rest for about 5 minutes before slicing. This allows the juices to redistribute within the meat.
Assembly
- 3
Prepare the Tray
In a large serving tray, layer the mixed greens as the base.
- 4
Add Chicken
Slice the grilled chicken breasts into strips and arrange them over the mixed greens.
- 5
Add Vegetables
Sprinkle the diced tomatoes, corn, and black beans evenly over the chicken.
- 6
Top with Onions
Add a generous layer of crispy cheddar onions on top of the salad.
- 7
Drizzle Dressing
Finish by drizzling the chipotle ranch dressing over the entire tray. Serve the remaining dressing on the side.
