Prepare the Chicken
Preheat your grill or stovetop grill pan over medium heat. Season the boneless, skinless chicken breasts with salt and pepper to taste. Grill the chicken for about 6-8 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C). Brush the chicken with BBQ sauce during the last few minutes of grilling.

Prepare the Salad Base
While the chicken is grilling, in a large bowl, combine the mixed greens, corn, black beans, and diced tomatoes. Toss gently to mix all ingredients.

Assemble the BBQ Chicken Bowl
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the grilled chicken into strips. In serving bowls, divide the mixed greens mixture evenly. Top each bowl with sliced chicken, a generous drizzle of chipotle ranch dressing, and a handful of crispy cheddar onions.
