    In a large bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Mix well. Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Cook the Chicken

    Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade and discard any leftover marinade. Cook the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Make the Chimichurri Sauce

    In a medium bowl, combine chopped parsley, chopped cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix thoroughly until well combined. Let the sauce sit for at least 10 minutes to allow the flavors to meld.
