Preparation of the Roast

Season the Beef
Preheat your oven to 225°F (107°C). In a small bowl, mix the salt, black pepper, garlic powder, and onion powder. Rub this mixture all over the American Wagyu beef roast.

Roast the Beef
Place the seasoned roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast and place it in the preheated oven. Roast until the internal temperature reaches 130°F (54°C) for medium-rare, about 3-4 hours.

Rest the Roast
Once the desired temperature is reached, remove the roast from the oven and tent it with aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

Slice the Beef
After the roast has rested, slice it thinly against the grain to ensure tenderness.

Build the Sandwiches
On each sandwich roll, spread a generous layer of mayonnaise. Layer with sliced Wagyu beef, followed by provolone cheese, lettuce, tomato, and onion.

Close the sandwich rolls and serve immediately while the beef is warm and the cheese is slightly melted.
