Prepare the Vegetables
Preheat your oven to 400°F (200°C). Slice the fennel, eggplant, and zucchini into thin rounds.

Season the Vegetables
In a large bowl, toss the sliced fennel, eggplant, and zucchini with olive oil, salt, and black pepper.

Bake the Vegetables
Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for about 25 minutes, or until they are tender and slightly caramelized.

Assemble the Pitza
Once the vegetables are done, remove them from the oven. On a pizza base, spread the tomato sauce evenly. Layer the roasted vegetables on top and sprinkle with chili flakes.

Return the assembled Pitza to the oven and bake for an additional 10-15 minutes, or until the edges are golden brown.

Remove from the oven, let cool for a few minutes, slice, and serve warm.
