Prepare the Oven
Preheat your oven to 375°F (190°C).

Prepare the Crust
In a bowl, mix together the chopped calamata olives, panko breadcrumbs, chopped pistachios, minced garlic, olive oil, lemon juice, salt, and black pepper until well combined.

Prepare the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper. Press the crust mixture onto the top of each salmon fillet, ensuring it is evenly covered.

Bake the Salmon
Bake the salmon in the preheated oven for 15-20 minutes or until the salmon is cooked through and the crust is golden brown.

Prepare Basmati Rice
While the salmon is baking, cook the basmati rice according to package instructions.

Sauté the Spinach
In a skillet, add a little olive oil over medium heat, then add fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Serve
Once the salmon is done, serve it alongside the basmati rice and sautéed spinach. Enjoy your meal!
