Cooking Instructions

  1. 1

    Prepare the Lamb

In a large pot or tajine, heat the olive oil over medium heat. Season the lamb shanks with salt and black pepper, then brown them on all sides. Remove the lamb and set aside.

  2. 2

    Sauté Vegetables

In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute.

  3. 3

    Add Spices

Stir in the ground cumin, coriander, cinnamon, and ginger. Cook for about 2 minutes until fragrant.

  4. 4

    Combine Ingredients

Return the lamb shanks to the pot. Add the chicken broth, prunes, and honey. Bring to a simmer.

  5. 5

    Slow Cook

Cover the pot and reduce heat to low. Cook for about 2 hours, or until the lamb is tender and falling off the bone.

  6. 6

    Toast Almonds

In a dry skillet over medium heat, toast the slivered almonds until golden brown. Set aside.

  7. 7

    Cook Basmati Rice

In a separate pot, bring 3 cups of water to a boil. Add the basmati rice and a pinch of salt. Reduce heat, cover, and simmer for 15 minutes or until the rice is fluffy.

  8. 8

    Serve

Serve the lamb tajine over the basmati rice, garnished with toasted almonds.
