    Prepare the Filling

    In a large bowl, combine the Egyptian rice, diced tomato, chopped parsley, olive oil, salt, black pepper, and lemon juice. Mix well and set aside.

    Stuff the Grape Leaves

    Carefully rinse the grape leaves under cold water to remove any brine. Lay a grape leaf flat on a clean surface, vein side up. Place about 1 tablespoon of the rice mixture at the base of the leaf. Fold in the sides and roll tightly from the base to the tip. Repeat with remaining leaves and filling.

    Cook the Grape Leaves

    Place the stuffed grape leaves seam-side down in a large pot. Add enough water to cover the leaves, and drizzle with a bit more olive oil. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes until the rice is cooked and the leaves are tender.

    Cool and Serve

    Once cooked, remove from heat and let the grape leaves cool completely in the pot. Serve cold with tzatziki sauce on the side.
