Ice Cream Base

Method

Preparation Steps

  1. 1

    Prepare the Base

In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt. Heat over medium heat until the mixture is warm and the sugar is dissolved.

  2. 2

    Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually add about a cup of the warm milk mixture to the egg yolks, whisking constantly to temper the eggs.

  3. 3

    Combine and Cook

Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not boil.

  4. 4

    Add Vanilla

Remove the saucepan from heat and stir in the vanilla extract. Pour the custard into a bowl and let it cool to room temperature.

  5. 5

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight until completely chilled.

  6. 6

    Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  7. 7

    Freeze the Ice Cream

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

  8. 8

    Serve

Scoop the vanilla ice cream into bowls or cones and enjoy!
