    Prepare the Shrimp

    In a bowl, mix the Monterey Jack cheese and diced jalapeño. Carefully butterfly the shrimp and stuff each with the cheese and jalapeño mixture. Wrap each stuffed shrimp with a slice of bacon, securing with a toothpick if necessary.

    Marinate the Meats

    In a separate bowl, combine olive oil, lime juice, chili powder, cumin, salt, and black pepper. Add the skirt steak and chicken breast and marinate for at least 30 minutes.

    Grill the Shrimp

    Preheat the grill to medium-high heat. Grill the bacon-wrapped shrimp for about 3-4 minutes on each side or until the bacon is crispy and the shrimp are cooked through.

    Grill the Meats

    Remove the chicken and steak from the marinade and place on the grill. Cook the skirt steak for about 5-6 minutes on each side for medium-rare. Grill the chicken for about 6-7 minutes on each side or until fully cooked.

    Serve

    Remove all from the grill and let rest for a few minutes. Serve the grilled shrimp alongside the skirt steak and chicken with a generous portion of Mexican butter.
