    Prepare the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Cook for about 18 minutes or until rice is tender. Fluff with a fork and set aside.

    Prepare the Beans

    Open the can of black beans, rinse under cold water, and heat in a small saucepan over low heat until warmed through. Stir occasionally.

    Prepare the Vegetables

    Slice zucchini, yellow squash, portobello mushrooms, bell peppers, and onion into even pieces. In a large bowl, toss them with olive oil, mesquite seasoning, and salt.

    Grill the Vegetables

    Preheat grill to medium-high heat. Place the seasoned vegetables on the grill and cook for about 5-7 minutes on each side, or until they are tender and have grill marks.

    Serve

    On a plate, serve a portion of cilantro rice, top with black beans, and arrange the grilled vegetables on the side. Garnish with fresh cilantro.
