    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.

    Cook the Base

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and grated ginger, cooking for another minute.

    Add Tomatoes and Vegetables

    Stir in the tomato paste and diced tomatoes, cooking for about 5-7 minutes until thickened. Add the chopped red bell pepper, diced carrot, and green peas.

    Flavor the Rice

    Add the rinsed rice to the pot, stirring to coat the grains with the tomato mixture. Pour in the vegetable broth and add thyme, bay leaves, salt, and black pepper. If using, add the whole scotch bonnet pepper for heat.

    Cook the Jollof Rice

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

    Fluff the rice with a fork and serve warm as a side dish or a main meal.
