    Prepare the Tomato Base

    In a blender, combine tomatoes, onion, red bell pepper, garlic, and ginger. Blend until smooth.

    Cook the Base

    In a large pot, heat vegetable oil over medium heat. Pour in the blended mixture and cook, stirring occasionally, for about 10-15 minutes until it thickens and the oil separates.

    Add Spices and Broth

    Stir in bay leaves, thyme, salt, black pepper, and optional Scotch bonnet pepper. Add the broth and bring to a boil.

    Add Rice

    Once boiling, add the long-grain parboiled rice. Stir well, reduce heat to low, and cover the pot. Cook for 20-25 minutes or until the rice is tender and the liquid is absorbed.

    Fluff and Serve

    Remove the pot from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
