Prepare the Fish
Marinate the fish fillets with Thai red curry paste, salt, and black pepper. Let it sit for 15 minutes.

Fry the Fish
Heat vegetable oil in a frying pan over medium heat. Once hot, fry the marinated fish for about 3-4 minutes on each side or until golden brown and cooked through. Remove and let drain on paper towels.

Prepare the Aioli
In a bowl, mix mayonnaise with lemon juice and a pinch of salt. Adjust seasoning to taste.

Cook the Plantains
Peel and slice the sweet yellow plantains. In a separate pan, fry the slices in oil until golden and caramelized, about 2-3 minutes per side.

Assemble the Tacos
Warm the corn tortillas in a dry skillet. Fill each tortilla with the fried fish, mixed greens, a spoonful of salsa, and drizzle the house aioli on top.

Serve the tacos warm alongside the fried sweet plantains.
