Tap maple trees in early spring when the temperatures fluctuate between freezing at night and thawing during the day. Collect the sap in clean buckets or bags, ensuring that no contaminants enter the sap.

Filter the collected sap through cheesecloth or a fine mesh strainer to remove debris and impurities.

Boiling Sap
In a large evaporator or pot, boil the filtered sap over a heat source. Maintain a steady boil to evaporate the water content, stirring occasionally to prevent scorching.

Monitoring Temperature
Use a candy thermometer to monitor the temperature of the boiling sap. When it reaches 104°C (219°F), it is close to becoming syrup.

When the sap reaches the desired temperature, remove it from heat. Let it cool slightly before filtering it again to ensure clarity.
