In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, onion, and garlic. Add the salt, black pepper, and finely chopped Scotch bonnet pepper, adjusting to taste for heat.

Let it Marinate
Cover the slaw and let it sit for at least 30 minutes at room temperature or refrigerate for up to 2 hours to allow the flavors to meld.
