Preparation Instructions

  1. 1

    Prepare the Vegetables

Shred the cabbage and carrots using a grater or food processor. Slice the red bell pepper into thin strips. Finely chop the onion and mince the garlic.

  2. 2

    Mix the Ingredients

In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, onion, and garlic. Add the salt, black pepper, and finely chopped Scotch bonnet pepper, adjusting to taste for heat.

  3. 3

    Add the Dressing

In a separate bowl, whisk together the vinegar and olive oil. Pour this dressing over the slaw mixture and toss well to combine all ingredients.

  4. 4

    Let it Marinate

Cover the slaw and let it sit for at least 30 minutes at room temperature or refrigerate for up to 2 hours to allow the flavors to meld.

  5. 5

    Serve

Toss the slaw again before serving. Enjoy it as a side dish or condiment with your favorite Haitian dishes.
