Injera Preparation

    Mix Ingredients

    In a large bowl, combine the teff flour and water. Whisk until smooth. Cover and let it ferment at room temperature for 24-48 hours, until bubbly.

    Add Salt and Baking Soda

    Once the batter has fermented, stir in the salt and baking soda until fully combined.

    Cook Injera

    Heat a non-stick skillet or a traditional mitad over medium heat. Pour in a ladle of batter and swirl to spread evenly. Cook for about 2-3 minutes, until bubbles form on the surface, then cover and cook for an additional minute. Remove and let it cool on a plate.
