Cooking Instructions

  1. 1

    Prepare the Beans

Soak the red beans in water for at least 6 hours or overnight. Drain and rinse before using.

  2. 2

    Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

  3. 3

    Add Garlic and Spices

Stir in the minced garlic, cumin, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

  4. 4

    Combine Ingredients

Add the soaked red beans, vegetable broth, diced tomatoes, and bay leaf to the pot. Stir well to combine.

  5. 5

    Simmer the Stew

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 45-60 minutes, or until the beans are tender.

  6. 6

    Finish with Spinach

Once the beans are tender, stir in the chopped spinach and let cook for an additional 5 minutes until wilted.

  7. 7

    Serve

Remove the bay leaf and stir in the chopped parsley before serving. Enjoy your hearty red bean stew!
