Prepare the Goat Cheese Mixture
In a mixing bowl, combine the goat cheese and dried cranberries. Mix until well combined. Form the mixture into small balls (about 1 inch in diameter) and place them on a baking sheet.

Bread the Goat Cheese Balls
Roll each goat cheese ball first in the gluten-free flour, then dip it into the beaten eggs, and finally coat it with the breadcrumb and coconut mixture. Place the breaded balls back onto the baking sheet.

Fry the Goat Cheese Balls
In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the goat cheese balls in batches, frying until golden brown on all sides (about 2-3 minutes per side). Remove them and place on a paper towel-lined plate to drain excess oil.

Prepare Salted Honey
In a small bowl, mix the honey with a pinch of salt to create the salted honey dipping sauce.
