Prepare the Chicken
Rinse the chicken under cold water and pat it dry with paper towels. Rub olive oil all over the chicken, then season with garlic powder, onion powder, paprika, salt, black pepper, and fresh herbs.

Marinate
Drizzle lemon juice over the seasoned chicken, cover it with plastic wrap, and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare the Smoker
Soak the applewood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Chicken
Place the soaked applewood chips in the smoker box. Once the smoker is ready, place the marinated chicken on the grill grate. Close the lid and smoke for about 3 to 4 hours or until the internal temperature reaches 165°F (74°C).

Serve
Remove the chicken from the smoker, let it rest for 10 minutes, then carve and serve with fresh tomatoes on the side.
