Broth Preparation

Cook Pork Belly

In a large pot, add the pork belly and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour until tender. Remove the pork and set aside, reserving the broth.

Make Broth

In the same pot with the reserved broth, add soy sauce, miso paste, ginger, garlic, scallions, and dashi powder. Bring to a simmer and cook for an additional 30 minutes to infuse flavors.

Noodle Cooking

Cook Ramen Noodles

In a separate pot, boil water and add ramen noodles. Cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

Prepare Soft-Boiled Eggs

Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes. Transfer to an ice bath for 5 minutes, then peel and slice in half.

Prepare Vegetables

Wash and prepare the bean sprouts and baby spinach. Set aside for assembly.

Assemble Ramen Bowls

In large bowls, add a portion of ramen noodles. Ladle the hot broth over the noodles. Top with slices of pork belly, soft-boiled egg halves, nori sheets, bean sprouts, and baby spinach. Sprinkle with sesame seeds before serving.
