Preparing the Fries
Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.
Soaking the Potatoes
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch for crispiness.
Drying the Fries
After soaking, drain the fries and pat them dry thoroughly with paper towels to remove any moisture.
Frying the Fries
Heating the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Draining and Salting
Remove the fries with a slotted spoon and drain them on paper towels. While they are still hot, sprinkle with salt to taste.

Mixing the Seasoning
In a bowl, combine the grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, dried oregano, and dried thyme. Mix well to combine.

Topping the Fries
Once the fries are cooked and drained, sprinkle the umami seasoning generously over the hot fries.
