Prepare Sushi Rice

Rinse the Rice
Thoroughly rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 18 minutes. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula to avoid crushing the grains. Allow the rice to cool to room temperature.

Chop the Tuna
Dice the fresh tuna into small cubes and place it in a mixing bowl.

Mix the Filling
Add mayonnaise, Sriracha sauce, chopped green onion, and sesame oil to the diced tuna and mix until well combined.
Assemble the Sushi Rolls

Prepare the Rolling Station
Lay out a bamboo sushi mat and place a sheet of nori on top, shiny side down.

Spread the Rice
Wet your hands to prevent sticking and take a handful of sushi rice. Evenly spread it over the nori, leaving about 1 inch at the top edge of the nori.

Add the Filling
Place a line of the spicy tuna filling and slices of avocado across the center of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until you reach the bare edge of the nori. Moisten the edge with a little water to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices. Serve with soy sauce, pickled ginger, and wasabi.
