    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Make the Filling

    In a large bowl, combine the ground pork, chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, and pepper. Mix well until all ingredients are thoroughly combined.

Assembling Gyoza

    Form the Dumplings

    After resting, roll the dough into a long log and cut it into small pieces about the size of a walnut. Roll each piece into a thin circle (about 3 inches in diameter). Place a spoonful of filling in the center of each wrapper. Moisten the edges with water and fold the wrapper over to form a half-moon shape, pressing to seal.

Cooking

    Pan-fry the Gyoza

    Heat vegetable oil in a large non-stick skillet over medium heat. Place the gyoza in the skillet, flat side down, and cook until the bottoms are golden brown (about 2-3 minutes). Carefully add 1 cup of water to the skillet and cover immediately. Allow the gyoza to steam for about 5-7 minutes until the water evaporates.

    Serve

    Once the water has evaporated, remove the lid and allow the gyoza to cook for an additional 1-2 minutes to crisp up the bottoms. Serve hot with soy sauce or your favorite dipping sauce.
