Preparing the Oysters

Shucking the Oysters

Carefully shuck the fresh oysters and place them on a tray. Reserve the oyster liquor.

Roasting

Preheat your oven to 400°F (200°C). Place the shucked oysters on a baking sheet and roast for about 10 minutes until the edges start to curl.

Making Koji Creamed Spinach

Sautéing Spinach

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted.

Creating Cream Sauce

Stir in the koji and heavy cream, and cook until the mixture thickens. Season with salt and black pepper to taste.

Preparing Ponzu Sauce

Mixing Ingredients

In a bowl, whisk together soy sauce, citrus juice, rice vinegar, mirin, and chopped scallions until combined.

Serving

Place a spoonful of koji creamed spinach on each roasted oyster and drizzle with ponzu sauce before serving.
