    Prepare the Wagyu Beef

    Finely chop the wagyu beef using a sharp knife. Ensure the pieces are small and uniform for the best texture.

    Season the Beef

    In a mixing bowl, combine the chopped wagyu beef with aged tamari, sea salt, and fresh ground black pepper. Mix gently to avoid breaking up the beef.

    Prepare Cured Egg Yolks

    If you haven’t done this ahead of time, cure the egg yolks by placing them in a mixture of salt and sugar for at least 24 hours. After curing, rinse the yolks gently.

    Assemble the Tartare

    On a serving plate, place the seasoned wagyu beef in the center. Create a small well in the middle and carefully place the cured egg yolk on top.

    Add Tapioca Pearls

    Sprinkle the sesame tapioca pearls around the beef tartare for added texture and presentation.

    Garnish and Serve

    Garnish with finely chopped chives and serve immediately. Enjoy your wagyu tartare with additional tamari on the side, if desired.
