Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the washed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, allow it to steam for an additional 10 minutes.

Season the Rice
In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Once the rice has finished steaming, transfer it to a large bowl and gently fold in the vinegar mixture.

Prepare the Fish
Using a sharp knife, thinly slice the salmon, tuna, and yellowtail fillets into sashimi-style pieces. Arrange them neatly on a plate.

Assemble the Ni Box
In a serving bowl, place a generous amount of seasoned sushi rice. Arrange the sashimi slices on top of the rice. Garnish with chopped chives and sprinkle sesame seeds over the dish.

Add Accompaniments
Serve the Ni Box with wasabi, soy sauce, and pickled ginger on the side for dipping and added flavor.
