    Preparing the Fish

    Clean the madai under cold running water. Make three diagonal slits on each side of the fish to allow for even cooking and flavor absorption.

    Seasoning

    Rub salt generously over the fish, inside and out. Let it sit for about 15 minutes to draw out moisture and enhance the flavor.

    Marinating

    In a bowl, mix mirin, soy sauce, and sake. Place the fish in a large dish and pour the marinade over it. Let it marinate for at least 30 minutes in the refrigerator.

    Preparing for Cooking

    Preheat your grill or oven to medium heat (about 375°F/190°C). Stuff the cavity of the fish with sliced ginger, green onions, and lemon slices.

    Cooking

    Place the fish on the grill or in a baking dish and cook for 20-25 minutes, turning occasionally, until the flesh is opaque and flakes easily with a fork.

    Serving

    Remove from heat and let it rest for a few minutes. Serve the madai whole with the remaining marinade drizzled on top.
