1. Prepare the Mushrooms

Clean the seasonal mushrooms gently with a damp cloth and slice them thinly. If using shiitake mushrooms, remove the stems.

2. Sauté Shallots

Finely chop the shallots and heat sesame oil in a pan over medium heat. Add shallots and sauté until they become translucent.

3. Add Mushrooms

Add the sliced mushrooms to the pan with the sautéed shallots. Cook for about 5-7 minutes until the mushrooms are tender.

4. Season the Mixture

Pour in the shiro zu and season with salt and pepper. Stir well to combine and cook for an additional 2-3 minutes.

5. Finish with Chives

Remove from heat and sprinkle chopped chives over the mushroom mixture. Toss gently before serving.
