Preparation

1. Prepare Sushi Rice

Rinse the sushi rice until the water runs clear. Cook according to package instructions. Once cooked, mix rice vinegar, sugar, and salt together and gently fold into the rice. Allow to cool.

2. Make Nigiri

Once the rice is cool, wet your hands and take a small amount of rice, shaping it into an oval. Top each piece with a slice of fresh fish. Repeat until you have 12 pieces.

3. Prepare Makimono

Place a nori sheet on a bamboo mat. Spread an even layer of sushi rice over the nori, leaving a small border. Add vegetables in the center and roll tightly. Cut into 8 pieces. Repeat with the second nori sheet.

4. Serve

Arrange the nigiri and makimono on a platter. Drizzle with hama chili oil and serve with wasabi and soy sauce on the side.
