1. Prepare the Hot Rock
Heat a smooth, flat rock or a grill stone to high temperatures (around 400°F or 200°C). Ensure the rock is thoroughly cleaned before use.
2. Prepare the Beef
Slice the Australian Wagyu beef into thin strips or bite-sized pieces. Season with sea salt and black pepper to taste.
3. Drizzle with Sesame Oil
Drizzle the sesame oil over the beef slices and mix to coat evenly.
4. Cook on the Hot Rock
Place the seasoned beef onto the hot rock. Sear for about 1-2 minutes on each side, depending on your preferred doneness. The beef should be crispy on the outside and tender on the inside.
5. Serve with Ponzu
Remove the beef from the rock and serve immediately with ponzu sauce for dipping. Garnish with sliced green onions.
