    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

    Prepare the Hirame

    Using a sharp knife, slice the fresh Hirame fillet into thin pieces, approximately 1/4 inch thick.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small handful of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of Hirame on top of the rice. Optionally, you can add a small dab of wasabi between the rice and the fish.

    Serve

    Arrange the Hirame nigiri on a plate. Serve with soy sauce and additional wasabi on the side.
