Pickle the Onions
Slice the red onion thinly and place it in a clean jar. In a small saucepan, combine the apple cider vinegar, water, sugar, and salt. Heat until the sugar and salt are dissolved. Pour the hot liquid over the onions in the jar, making sure they are fully submerged. Allow to cool, then refrigerate for at least 1 hour.

Prepare the Tofu
Drain the silken tofu and gently pat it dry with a paper towel. Cut it into cubes or slices, depending on your preference.

Assemble the Dish
On a serving plate, arrange the heirloom tomato slices. Top them with the silken tofu cubes, spoon the strawberry XO sauce over the tofu, and add the pickled onions. Garnish with fresh basil leaves and sprinkle with black pepper to taste.
