Preparation

    Prepare the Hamachi Collar

    Season the hamachi collar with salt and black pepper. Set aside.

    Make the Curry Sauce

    In a saucepan, heat a little olive oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion becomes translucent. Stir in the curry powder and cook for another minute. Add the diced tomatoes and coconut milk, and season with salt and pepper. Simmer for about 10 minutes.

    Cook the Chickpeas

    In another pan, heat olive oil over medium heat. Add the drained chickpeas, cumin, and salt. Cook until heated through and slightly crispy, about 5-7 minutes.

    Cook the Hamachi Collar

    In a grill or frying pan, cook the hamachi collar for about 4-5 minutes on each side, or until cooked through and golden brown.

Assembly

    Serve

    On a plate, create a bed of the tomato curry sauce, place the cooked hamachi collar on top, and scatter the crispy chickpeas around. Garnish with fresh mint leaves.
