    Marinate the Short Ribs

    In a bowl, combine soy sauce, sesame oil, minced garlic, and black pepper. Add the short ribs and marinate for at least 1 hour, preferably overnight.

    Grill the Short Ribs

    Preheat the grill to medium-high heat. Grill the marinated short ribs for about 4-5 minutes on each side or until cooked to your desired doneness. Remove from the grill and let them rest for a few minutes.

    Prepare the Gyumaki

    Soak rice paper sheets in warm water for about 20-30 seconds until soft. Lay a soaked rice paper on a clean surface. Place a few pieces of grilled short rib, a couple of tablespoons of kimchi, and a handful of Thai basil leaves on the rice paper.

    Roll the Gyumaki

    Fold the sides of the rice paper over the filling and then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining ingredients.

    Serve

    Serve the gyumaki with additional kimchi on the side, and enjoy!
