Preparation and Serving

    Prepare the Oysters

    Rinse the fresh oysters under cold running water to remove any sand or debris. Scrub the shells gently with a brush if necessary.

    Shuck the Oysters

    Using an oyster knife, carefully shuck each oyster. Hold the oyster in a towel to protect your hand, insert the knife into the hinge, and twist to open. Remove the top shell and loosen the oyster from the bottom shell.

    Prepare the Dipping Sauce

    If you are making jeow som from scratch, blend together ingredients such as roasted chili, garlic, fish sauce, lime juice, and sugar until smooth. Adjust seasoning to taste.

    Garnish

    Finely chop the fresh cilantro and slice the Fresno peppers. Arrange the oysters on a platter and sprinkle the cilantro and sliced Fresno peppers over the oysters.

    Serve

    Serve the oysters chilled with jeow som and lemon wedges on the side for squeezing over the oysters.
