Prepare the Duck
Rub the duck legs with salt, crushed garlic, thyme, and black peppercorns. Let marinate in the refrigerator for at least 24 hours.

Rinse and Dry
After marination, rinse the duck legs under cold water to remove excess salt. Pat dry with paper towels.

Cook Duck Legs
In a large oven-safe pot or Dutch oven, melt the duck fat over low heat. Add the duck legs, ensuring they are fully submerged in the fat.

Confit the Duck
Cook the duck legs on low heat for about 2 to 3 hours, or until the meat is tender and easily pulls away from the bone.

Cool and Store
Remove the pot from heat and let it cool. Store the duck legs in the fat in the refrigerator for up to 1 month.
