Method
Preparing the Broth

Boil the Beef
In a large pot, add the beef shank and cover with 2 liters of water. Bring to a boil over high heat.

Simmer
Once boiling, reduce the heat to medium-low. Add the onion, ginger, star anise, cinnamon stick, fish sauce, salt, black peppercorns, and chili paste. Cover and let simmer for 2 hours or until the meat is tender.

Strain the Broth
After simmering, remove the beef shank and set aside. Strain the broth through a fine mesh sieve to remove the solids, returning the liquid to the pot.

Shred the Beef
Once the beef has cooled slightly, shred it into bite-sized pieces and set aside.
Cooking the Noodles

Cook the Noodles
Bring a separate pot of water to boil. Add the thick rice noodles and cook according to package instructions until tender. Drain and set aside.
Assembly

Prepare the Bowl
In serving bowls, place a portion of the cooked noodles. Top with shredded beef and slices of Vietnamese meat loaf.

Add the Broth
Ladle the hot beef broth over the noodles and meat.

Garnish
Garnish each bowl with fresh cilantro, chopped green onions, a wedge of lime, bean sprouts, and sliced red chili.
