Shrimp Mixture Preparation

Soak the Dried Shrimp
Place the dried shrimp in a bowl and cover them with warm water. Let them soak for about 30 minutes until they soften.

Make the Dough
Drain the soaked shrimp and finely chop them. In a mixing bowl, combine the chopped shrimp, tapioca starch, salt, white pepper, and sugar. Gradually add water while mixing until a smooth dough forms.

Shape the Chips
Transfer the dough onto a clean surface and roll it out to about 1/8 inch thickness. Cut the dough into small rounds or desired shapes using a cookie cutter or knife.

Dry the Chips
Arrange the shaped chips on a baking tray lined with parchment paper. Let them air dry for at least 4 hours or until they are completely dry and firm.
Frying

Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches about 180°C (350°F).

Fry the Chips
Carefully add a few dried shrimp chips to the hot oil, making sure not to overcrowd the pan. Fry them for about 30 seconds or until they puff up and turn golden brown.

Drain and Cool
Using a slotted spoon, remove the fried chips from the oil and drain them on paper towels. Allow them to cool completely before serving.
