Tofu Preparation

    Press the Tofu

    Wrap the firm tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture for about 20 minutes.

    Marinate the Tofu

    Once pressed, cut the tofu into thin strips. In a bowl, mix soy sauce, garlic powder, and black pepper. Marinate the tofu strips in this mixture for at least 15 minutes.

    Shred the Tofu

    After marinating, use a fork to shred the tofu into bite-sized pieces.

Pickled Vegetables

    Prepare the Pickling Solution

    In a pot, combine vinegar, sugar, and salt. Heat over medium heat until the sugar dissolves. Remove from heat and let cool.

    Pickle the Vegetables

    In a jar, layer the julienned carrots and daikon. Pour the pickling solution over the vegetables. Seal the jar and refrigerate for at least 30 minutes.

    Slice the cucumber and jalapenos. Chop the cilantro. Set aside for assembly.

    Mix the Sauce

    In a bowl, combine the vegetarian pâté, soy sauce, and sesame oil until smooth.

Assembly

    Assemble the Sandwich

    Slice the Vietnamese-French bread rolls open. Spread a layer of the pâté sauce on both sides of the bread. Next, add the shredded tofu, pickled vegetables, cucumber, jalapenos, and cilantro. Close the sandwich and serve.
