Prepare the Broth
In a large pot, combine the vegetable broth, sliced ginger, halved onion, star anise, cinnamon stick, and cloves. Bring to a boil over medium-high heat.

Simmer the Broth
Once boiling, reduce heat to low and let the broth simmer for about 30 minutes. This allows all the flavors to meld together.

After simmering, stir in the soy sauce and lime juice. Adjust seasoning to taste. If the broth is too strong, you can dilute it with a bit of water.

Remove the pot from heat and strain the broth through a fine mesh sieve into another pot to remove the solid spices and ginger.

In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions, usually about 4-6 minutes. Drain and set aside.

In a large bowl, place a serving of the cooked rice noodles. Ladle the hot vegetable broth over the noodles.
