Pho With Beef Broth Recipe

Broth Preparation

Roasting the Ingredients
Preheat your oven to 200°C (400°F). Place the beef bones on a baking sheet and roast for 30 minutes until browned. In the last 10 minutes, add the whole onion (halved) and ginger (sliced) to the baking sheet to roast.

Simmering the Broth
In a large pot, combine the roasted bones, onion, ginger, water, star anise, cinnamon stick, and cloves. Bring to a boil over high heat, then reduce to a low simmer. Skim off any foam that rises to the surface. Simmer for at least 4 hours, adding water as needed to keep the bones submerged.

Finishing the Broth
After simmering, strain the broth through a fine mesh sieve into another pot. Discard solids. Stir in fish sauce and salt to taste. Keep the broth warm.
Noodle and Topping Preparation

Cooking the Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions (usually about 5-7 minutes). Once cooked, drain and rinse with cold water to stop the cooking process.

Preparing the Garnishes
While the noodles are cooking, slice the jalapenos and lime. Rinse the bean sprouts and chop the cilantro.

Assembling the Pho
In a serving bowl, place a portion of cooked rice noodles. Arrange raw sliced beef sirloin on top. Pour hot broth over the noodles and beef. Serve immediately with the garnished plate of bean sprouts, jalapenos, lime, and cilantro on the side.
