Method

Preparing the Broth

    Make the Beef Broth

    In a large pot, combine the beef broth with water and bring to a boil. Add the round steak, brisket, tripe, and soft-tendon.

    Simmer the Broth

    Reduce the heat to low and let it simmer for about 1.5 to 2 hours, until the meats are tender. Skim any impurities that rise to the surface.

    Season the Broth

    Towards the end of the simmering time, season the broth with fish sauce, salt, and black pepper to taste.

Cooking the Noodles and Meats

    Cook the Pho Noodles

    In a separate pot, boil water and cook the pho noodles according to package instructions. Drain and set aside.

    Prepare the Meats

    Once the meats are tender, remove the round steak and brisket from the broth and slice thinly. Leave tripe and soft-tendon in the broth.

Plating the Pho

    Assemble the Pho

    In large bowls, add a portion of cooked pho noodles, then ladle the hot broth with tripe and soft-tendon over the noodles.

    Garnish and Serve

    Top with sliced round steak and brisket, and garnish with thinly sliced red onion, chopped green onions, fresh basil leaves, lime wedges, and sliced chili peppers. Serve immediately.
