Broth Preparation

    Prepare the Bones

    In a large pot, add beef bones and cover them with water. Bring to a boil over high heat for about 10 minutes. This will help remove impurities.

    Rinse the Bones

    After boiling, drain and rinse the bones under cold water to remove any scum or residue.

    Make the Broth

    In the same pot, return the bones and add 4 quarts of fresh water. Add the whole onion (peeled and halved) and ginger (sliced).

    Add Aromatics

    Add star anise, cinnamon stick, cloves, cardamom pods, fish sauce, and salt to the pot. Bring to a boil, then reduce to a simmer.

    Simmer the Broth

    Cover the pot and let it simmer for at least 4 hours, skimming any fat or foam that rises to the surface.

Prepare the Noodles and Protein

    Cook the Noodles

    In another pot, bring water to a boil. Add rice noodles and cook according to package instructions until tender. Drain and set aside.

    Prepare the Beef

    Thinly slice the beef sirloin or brisket against the grain. If desired, you can briefly blanch the beef slices in the broth for a few seconds to cook them slightly.

Assembly

    Assemble the Bowls

    In a serving bowl, place a portion of cooked rice noodles. Top with sliced beef, then ladle the hot broth over the top.

    Add Garnishes

    Garnish with fresh basil leaves, cilantro, bean sprouts, jalapeños, and a wedge of lime. Finally, sprinkle chopped green onions on top.
