Making the Broth
In a large pot, add the beef bones and water. Bring it to a boil over high heat and skim off any scum that rises to the surface. Then, add the charred onion and ginger, star anise, cinnamon stick, cloves, fish sauce, sugar, and salt. Reduce the heat to low, cover, and let it simmer for at least 3 hours. The longer it simmers, the richer the flavor.

Preparing the Noodles
While the broth is simmering, prepare the rice noodles according to package instructions. Usually, this involves soaking them in hot water for about 20-30 minutes until they are tender.

Preparing the Beef
Thinly slice the beef sirloin or brisket against the grain. You can also briefly freeze the beef for easier slicing.

Serving the Pho
Once the broth has finished simmering, strain it to remove the solids. In a bowl, place a portion of noodles, some sliced beef, and pour hot broth over the top. Garnish with fresh herbs, lime wedges, bean sprouts, sliced chili peppers, and green onions. Serve immediately.
